This course, which may be taken in college or online, is designed to provide all food handlers with knowledge and understanding of current food safety practices and legislation. It is a nationally recognised qualification in all sectors of the food and hospitality industries and helps to ensure safe hygienic practices

NC Professional Cookery Level 5

Develop employability knowledge and practical skills for working in a professional kitchen, e.g. team working, food safety, food product knowledge, waste control, costings, food preparation, cookery and presentation skills.

The following units will be studied:

  • Professional Cookery: Kitchen Operations
  • Food Hygiene for the Hospitality Industry
  • Stocks, Sauces and Soups
  • Health and Safety in Hospitality
  • Pastry
  • Work Placement
  • Barista skills
